Avocado Mac N Cheese

I found this on Pinterest. I had to try it! I put it on recipe builder on the WW site and it is 12 PP per serving (1 cup). I am going to try and play around with it and lighten it up. 

Here is the current recipe and the finished product! Yum! 

10oz dry elbow macaroni 
2 cloves minced garlic-I used 5 
2 avocados, peeled and pitted
2 tbsp. fresh lime juice 
1/3c chopped cilantro 
Salt and pepper to taste 
2 tbsp butter 
2 tbsp flour 
1c milk 
2 cups pepper jack cheese, shredded

1. Boil water and cook macaroni. Drain and set aside. 
2. While the pasta is cooking, make avocado sauce by placing garlic, avocados, lime juice, salt and pepper into blender or food processor until creamy. Set aside. 
3. Cheese sauce, butter in small sauce pan over medium heat. When melted, whisk in flour to create paste. Whisk in milk until smooth. Stir with wooden spoon until it thickens. Add in cheese and stir until melted and creamy. 
4. Mix cooked noodles, avocado sauce and cheese sauce. 
5. Serve 

*like juice is used to keep avocado from browning. Serves best inn first two day.

Peeps S'mores

This might be the best idea,ever! 

1 sheet graham cracker-2PP
1 peep-1PP (mine were bunnies)
1/2 Hersey bar-3PP 

Microwave for 10 seconds and poof, 6PP of delicious! Nom! 

DITCH the scale!!!

When I started WW back in 2011, I was obsessed with the scale. I had one at home and I would weigh myself at least once a day. Sometimes twice a day and sadly even more then that. 

The days I would weigh myself more then once were the days I was not happy with the number the scale was showing me. I mean how much is it really going to change 17 minutes later? 

Sometimes I would weigh myself in the morning and be up 1.whatever pounds and then I would weigh myself after dinner on the same day, and I would be doen 1.whatever pounds. 

My weigh in is Friday morning at 10:00am central standard time. I would weigh myself at home and 100% of the time my scale was different then the WW scale. I spoke to my leader, Julie and she gave me a lot of suggestions. 

Best advice ever: stop weighing myself! Have one day when you weigh in and that is it! Let me tell you this was the BEST thing for me. I only weigh in at my weigh in on Friday mornings. I have a scale at home that I keep under my dresser (out of sight, out of mind)for the rare weeks where I cannot go to my weigh in. 

It helps, a lot!

**i do have a fitbit and a fitbit scale BUT I only use my fitbit scale e/o after my weigh in because it calculates my body fat and updates my fitbit goals! 

Weight Watchers Smoothies

My favorite recipes: 

Tropical Smoothie:
8oz coconut water- 1PP
Creamy Coconut mix-2PP
1 banana
Frozen pineapple or frozen pineapple, mango mix 

3PP of tropical deliciousness (pictured above) 

Diet Pop Smoothie:
12oz diet orange pop
Vanilla smoothie mix-2PP
1 banana
1/2c-1c frozen strawberries

2PP smoothies 

Sometimes I add different fruits to either. I also add chia seeds on occasion. Chia seeds do add points.

Apostle Islands Ice Caves

Last Saturday, a few friends and I drove almost 4 hours to see the ice caves on Lake Superior. 
When we finally arrived at Meyers beach, we had to park almost 3 miles away. There were cars for miles and miles on one side of the highway. And tons of people walking on the other side of the highway. By the time we made it around the bend and officially at Meyers beach, the amount of people there seemed to triple. 
We walked on the beach and then legit on frozen Lake Superior for 1.1 miles until we reached the first official ice cave. I learned in this first 1.1 miles that I cannot walk on snow because I kept falling and sinking. 

The Ice caves might be the most beautiful things I've ever seen. It was sketchy walking into some of them, infact I broke 2 toes about an hour into our treck. And you can see by my fitbit, I walked really far on broken toes. It was so amazing and so pretty. 


I am starting my #wwsendthelove group. Many people have seen this on my twitter and/my Instagram and have asked what it is about. This was started by a member named Kelli, in a nutshell we have a group of 6-10 (maybe more) members. We send each other motivational things, gifts, treats, tricks or whatever we choose. 

I know everyone kind of does their group a little different. I have decided that my group will rotate who we send stuff to every month. There is a monthly price limit and each person will get at least one box of treats a month. It is a very cool thing. 

Some people only do E-tools and are missing that meeting support. I adore my weekly meeting and the people I have met are spectacular.
