Here is the current recipe and the finished product! Yum!
10oz dry elbow macaroni
2 cloves minced garlic-I used 5
2 avocados, peeled and pitted
2 tbsp. fresh lime juice
1/3c chopped cilantro
Salt and pepper to taste
2 tbsp butter
2 tbsp flour
2 cups pepper jack cheese, shredded
1. Boil water and cook macaroni. Drain and set aside.
2. While the pasta is cooking, make avocado sauce by placing garlic, avocados, lime juice, salt and pepper into blender or food processor until creamy. Set aside.
3. Cheese sauce, butter in small sauce pan over medium heat. When melted, whisk in flour to create paste. Whisk in milk until smooth. Stir with wooden spoon until it thickens. Add in cheese and stir until melted and creamy.
4. Mix cooked noodles, avocado sauce and cheese sauce.
*like juice is used to keep avocado from browning. Serves best inn first two day.
