Beans & Rice-Simple Start

Ingredients: 
1 tsp olive oil 
1/8 tsp minced garlic
1/2c uncooked red onion 
1/2c green pepper
1/2c canned diced tomatoes 
1/2c canned black beans
1/2c cooked brown rice 
1 tbsp fat free sour cream 
1 tbsp cilantro 

Instructions: 
Heat oil in skillet over med-high heat; add  garlic and cook, stirring, until lightly browned. Add onions and peppers; sauté until tender. Add tomatoes and beans; cook, stirring, until heated through and then season to taste. Add sour cream and cilantro.
